I’m trying to set up a conference room in a revit project for interior rendering and I’m not seeing any availability to select cosmos furniture materials to change them. Is this not possible?

Editing materials of Cosmos assets is possible.
You need to go to V-Ray Appearance Manager > Families > Cosmos and select the 3 dots button of the wanted asset and click over Edit materials.
Then you will see the list of the applied materials and will be able to replace them with any already loaded to V-Ray Asset Editor.
