Is there a way to apply colours to services (Vent supply & extract etc.) instead of materials in enscape? The services will already be coloured within Revit.

Yes. Requires modeling systems with unique colors for each system type.
General Settings>Revit>Material Selection>Graphics (Appearance is default).
