This is going to make me sound like a newbie, but how I do I adjust exposure using the EV? Let’s see I get perfect exposure at f16, iso 100, and shutter speed 100, and I want to drop down the f-stop to a 2.8? From experience I know to raise my shutter speed to 2000, but isn’t there an easier way. Should I be able to just lower my f-stop and have my shutter speed or iso compensate? And without a cheat sheet?

F16, iso 100, and shutter speed 100 is an EV of 14.67. Just put that number in EV and change your F number to 2.8. Done
If you’re using the Max Physical camera you can simply switch between the manual (ISO, f-Stop, shutter) and Target (EV) and it updates the corresponding ISO/EV automatically. I don’t think there is a way to tell it to change the shutter instead of the ISO when directly modifying EV though.
BTW-shouldn’t you change the shutter to 1/3200 in your example (f16 to f2.8)? You’ve opened it up 5 stops which would mean closing the shutter for 2^5 (32) times shorter or 1/3200 sec.
Priority modes would be nice.
I think the max Physical camera kind of works in priority mode when using an EV value. E.g., set it to EV 14 to get the proper exposure but you are then free to change the shutter or f-stop to whatever you want and it will adjust the ISO accordingly to maintain an identical EV. Since we’re not really worried about ISO (we don’t actually care about the speed of the film) these are the only two values that matter I think. Adjust the f-stop to adjust your DOF and adjust the shutter to adjust MB.
