You can select materials you want to convert in Rhino Materials Tab while holding Shift and change Type from V-Ray Material to Rhino Physically Based. Afterwards, these materials will not be listed in V-Ray Asset Editor and editing will be possible only in Rhino Materials settings.
I would like to ask why you want to convert V-Ray materials to Rhino materials? What is your current workflow?
Also please note that converting them back to V-Ray materials will result in losing some of the initial V-Ray settings during these conversions, so we do not recommend such actions.
