Did you use SSS for the cheese?
I think it would look better without the noise over the whole image. Not sure if thats from your vray settings or post fx.

Swiss cheese is indeed much lighter than Dutch cheese.
Here are the settings. Remember to uncheck double sided to prevent painful headaches. Thickness and light multiplier will of course depend on the amount of light.

Topcat, I don’t have access to the file right now, but I rember it to be quite simple: Near to white (slightly yellowish) color, 100% white in reflection slot, fresnell checked.
Im actually surprised that there is no reflection to that cheese. There really should be a subtle glossy reflection that will be noticeable at the most extreme incidence angle. I noticed it in the picture and your material setup shows that my suspicions were correct.
