I think interiors look better when either the camera and target point are at the same level or you use the camera correction modifier. The raised images pointing down look very strange to me... ideally you want to feel like you are a person occupying the space, not a fly near the ceiling.
I agree with the no more than 50% ceiling idea, but i also think that if you are going for more like 20% then the image isnt going to look very good and that it also isnt going to help your issue of making the space look bigger. I think you need to try and use a wider angle lense and be careful about the placement of the camera so that nothing big is too close to the foreground. Maybe try a lower camera with target point on the same level so that your verticals stay vertical and so that you also see enough of the floor to help make the room seem bigger. Thats all i can think of.
Basically i think you may have to temporarily abandon your thoughts on showing ceilings to be able to try something new out. Ceilings should be a feature IMHO...and i dont think they make a room seem smaller by showing more of them (sometimes i think its the opposite)
