i tried in this scene to reach realistics results for food, sub surface scattering is better?

Very nice materiales bro, you could search for some evermotion tutorial, there are a few about fruits and asset texturing and shading. Algo digital tutors, vray skin, explains pretty well SSS2. And search a bit in zbrush central, there are some guys with very cool tips and tricks about vray sss.
