just wondering if there's been any more success on running RT GPU on the AMD cards in the Mac Pro's?

Unfortunately no.
It should work through external GPU boxes and NVIDIA devices though using CUDA.

Bit of a bummer still, as the office has dual 6GB AMDs in each Mac.

And a query on the difference between a program like Photoshop using the AMD cards (as see in Photoshop's preferences) and VRay accessing the cards? Would this be a different thing?

With OpenCL - no luck. CUDA still works though.

I saw that in the changelog for 3.5.03 that the OpenCL kernel can be compiled for Linux, does that mean that the other major unix platform (macOS) might be supported in the future?

We are doing everything that we can to make that happen. Unfortunately not everything depends on us ...
