I never use editable mesh, I think it's a bit rubbish.
It doesnt have bridge or connect, and you cant do a ctrl&a in edges mode because it selects all the stupid triangle edges.
The only time I use edit mesh is to break elements up into seperate objects for particle flow.
I use Edit Poly for everything but objects that will be used in a boolean operation. Edit Poly seems more efficient with memory, and the tools to work with an editable poly are much more robust. For some reason, though, Edit Mesh objects seem to be much more stable sub-objects withinin a boolean.
While modeling I use Editable Poly. After all the modeling is done I tend to collapse to Editable Mesh because it just seems to work faster in viewports.
