Does anyone have any good suggestions for UV mapping a object like this?

It's a laser scan of a waterfall that's going to have projection mapping done on top of it. The UV map can be in a few pieces but pretty much has to be fairly contiguous and somewhat regular. The model will eventually have words and images projected on to it so the uv pieces need to be kind of even to avoid distortion. Any help is much appreciated.

Thanks for the suggestions. I've never used zbrush so I think that's out. As for Unwrap UVW I think it would work fine but the mesh is like a million polygons which makes it unbearable slow or impossible. I'm looking into ways to do the UV mapping on a reduced poly version and then project it back onto the high res one but I'm not having any luck with "Projection". Any pointers would be great.
