The Rhino modellers out there find it nicer to model in Rhino then Max? How easy would it be for someone whos never touched Rhino to pick up its modelling techniques?

My experience with rhino:
At first, you'll learn very very quickly and be very happy with it.
Then, you come to a point where you will demand more of it, and some stuff will take you a long time to achieve because you need to know some rhino tricks which you will only learn after lots of modeling hours. You will be frustrated as you will see the weak points of rhino
After that, when you learned the strong and weak points of rhino, you know what you should and shouldn't try, you will get very happy with it again. It's modeling speed and freedom is amazing.
But actually, it just depends on what you're doing. Imo, a combination of programs is always best. If you need to model stuff for manufacturing purposes, you will find max with all its meshsmooth useless, you'll need a nurbs modeler. If you need parametric properties, rhino will be a pain in the ass... And so on....
So, to answer your question: yes rhino is easy and fun to learn, and the tutorials that come with it are great.
I teach rhino to students, they get a basic course in year 1 (9 lessons) and the advanced course in year 2 (also 9 lessons). After that, these students are modeling cars, discmans, cellphones, hairdryers,... really amazing!
here are some links to their work, most of it is made at the beginning or during year 2
