2 x 1.5 will be faster, but you will have total 1.5 gb of memory.\
So, if your scenes are not too big go with 2 x 1.5, otherwise go with the 3gb.

Yep. Go with the 3GB! Unless you are rendering small boxes with little to no detail. You will need the 3GB version, minimum!
