Yes, you just select the Infinite Plane viewport representation, select a material in the Asset Editor and 'Right Click > Apply to Selection'
Note that this action might not be updated properly during Interactive Rendering.

Thanks Konstantin! As you mentioned I tried it in Interactive mode. It works perfect in production mode.

It will also work in interactive, but you'll unfortunately have to restart the process.
