Is there a way to limit the amount of cores that vray takes to render? I'd like to be able to do other tasks on the desktop while it renders.

Yes, set the affinity on the Rhino.exe process. You can do it with the task manager:
(I don't thing that you can set the affinity for vray itself because it's running under the Rhino hood.)
Open task manager
Right click on Rhino.exe and choose 'details'
Right click on Rhino.exe and choose set affinity
Unselect the processors that you want to free up.
However, this is valid only for the running session.
You probably want this every time that you run Rhino, so you need to add the affinity switch to the Rhino shortcut.
