Possible to switch back to the dongle?

No, the process is not reversible. The migration itself does a bunch of checks to make sure that the licenses are successfully transferred and once this is done, the dongle becomes inactive (i.e. empty).
You can read more about the whole process here: https://docs.chaosgroup.com/display/...icenses+Online
What are your concerns? What problems do you expect to potentially have after switching to online?

What happens if vray is on a laptop working from holidays home where there is not networks?
Same if you travel to remote place, like in Africa, where networks is only on main cities.
How are we dealing with such case? The 2 weeks offline allowance is not going to help much.

Two weeks is the maximum allowed offline period, there's nothing else I can offer you as an alternative at the moment.
The offline period can be set for auto-renewal, but the renewal itself requires internet, if only for a very short while.
If you're planning on working offline for extended periods of time, then the dongle might be the better option.
