I'm doing a simulation of water pouring off of a table, and the water is falling in horizontal lines (see attached). Is there any way around this that doesn't result in my sim time increasing to an enormous degree?

Hey,
Looks like the liquid is moving too fast and the simulation can't keep up. If you increase the Steps per frame in the Dynamics rollout it should look much better. You can find more about it here - https://docs.chaosgroup.com/display/...ics-Parameters
Edit: oops - I'm not reading carefully - more steps per frame would make the sim look better but will increase the sim time so as Svetlin said it's best if we can see your settings and get more info for the sim time.

I did see that in the help, hence my cell size being set to 0.05, and steps set to 4, but oof. I was hoping to get this done quickly.

Wow, 1.2 BILLION voxels! This will simulate slow with more Steps Per Frame, but you have absolutely no other options that could affect this - Surface Tension could worsen it, or other algorithms in case you used foam and splash... I see you are not on the latest nightly though, and we did some speed improvements here: https://nightlies.chaosgroup.com/mai...ghtly/20210402
Also, your grid is huuuge - why don't you shrink it at the start and use adaptive grid - it would definitely speed it up.
I hope a latest nightly and adaptive grid will be able to compensate for increasing the steps per frame. If you raise them to 8, the banding should be much less noticable...

Looks like I've got some tutorial-watching to do. I'm almost a complete newbie. I just grabbed a 1-month subscription because Max Fluids was aggravating me.
If I sim using a nightly build will that prevent the scene from being compatible with a render farm I use that supports v4.30.00 ?- Geoff

Ahh, a farm might be an issue, or might not. We added some new things in rendering that older builds might not understand, but it depends on how the farm is set up and we can't know that if it's third party.
So in this case, start with the adaptive grid. This will yield the most significant speed improvement - definitely more than what the nightly would add.Svetlin Nikolov, Ex Phoenix team lead
