Is there any way to get a true (not orthographic) 360 degree panoramic render?

Yes, through the Spherical Panorama option (Render Setup>V-Ray>Camera>Type). More information in the technical documentation.

Weird. How did I not notice that before? I just updated from Next 4.30.01 to 4.30.03. Maybe it was in that?
