The hide by category and layers have always been like that.
As for snaps, the really annoying thing Autodesk did was screwing up the feature of activating snaps in mid-drag. This is something I always used to do, press s after i was dragging a vertex in a specific axis, using it for alignment basically. I have no idea why they did this though, but I'm guessing the person responsible had no idea that the old method was very good.

Other than that, I'd have to say I'm very pleased with 2011. Before on 2010 I crashed every other minute and viewports were slow, now everything is fast and snappy.
