There are a few primary components that make skin look like skin.
One is an extremely low glossy falloff specular reflection. I'm not sure if it's Fresnel type but I’d assume not. Something I've noticed recently is that the glossy amount of the reflection seems to be affected by a falloff also. I'm not positive about this and it doesn’t quite make sense but I've perceived it in a few photos.
The other aspect you need to address is SSS (Subsurface Scattering). SSS is created by the multiple layers of translucent material the skin is made of. Basically the light is reflected and/ or refracted differently for each layer it hits.
