Can I ask why there is no fog density adjustable parameter amount and only a texture slot ? I have a scene where I'm upping the fog distance but is this the same as fog density ?

The fog distance parameter determines the base fog density. From then on, the texture acts as a multiplier for that density. To reduce the effect of the texture, you can use a Mix map to mix it with a white color.
The reason to use distance instead of the optical density directly, is because the optical density itself is a somewhat unintuitive parameter ranging from zero (fully transparent) to infinity (fully opaque) and it is difficult to adjust it. The fog distance is a linear parameter that has a clearer relationship to the scene size.
