to answer the original question,
try hdri-only lighting and stay in 16bit mode for post. contrast is very important..it's easy to turn a sunlight scene into a moonlight scene as long as there is enough headroom for adjustments.
here is one testframe of an animation project that died before it was finished.
i don't really have settings to share because it was heavily comped in post and the original layers look totally different (and crappy).

Actually come to think of it there is also the "old school" method of using a dark blue filter in post over the entire frame.how they used to fake night scenes for old horror scenes that were shot in the day time.
