Windows 10 Pro here. Windows 7 wouldn't install on the new Threadripper 1950X workstation so the only option was to go with 10. I got used to it pretty quick and I haven't had major problems so far. As for the GPU RAM consumption problem, I haven't noticed that. With no programs open, Windows 10 borrows only 300 MB from my 1080 ti 11 GB (screenshot below).

If you do I would go for Windows 8.1. I have no problem with Windows 10 Pro, I think 10 is great and I miss some features in 8.1 but that vram occupied, tuned me into 8.1 and a dualboot system.

Windows 10 across the board here (workstations and nodes). It's been very stable for us, except the fall creators update which really crippled nvidia GPU's (across the world, not just ours).Check out my (rarely updated) blog @ http://macviz.blogspot.co.uk/
