If I remember correctly the fisheye rendering is in the current public version a kind of hack. Vray places a 100 percent reflective or was it
refractive sphere in front of the camera and renders the picture. As a
solution you could try to use material override and assign a 100% self illuminated pure white material to your scene and use environment
fog with pure black color and then use this image as zbuffer. Not sure if this works, just an idea.
no, neither zdepth nor dof haven't been working with fisheye cameras since the beginning
the camera uses a reflective 1 unit sphere - so your depth would have to be traced in the reflection
it's probably something that could be implemented, but currently it isn't
