It might be that you don't have enough VRAM to render the scene. Could you please monitor your VRAM consumption (you can use an external tool, such as GPU-Z) and see if you have enough memory to render the scene. Also, please make sure to install the recommended NVIDIA driver for V-Ray GPU which is version 497.09.

Thanks for the answer, from what I've seen so far I haven't reached the maximum memory, I leave images of my system to help you understand the problem, thank you.

I have tested the scene on a machine with a very powerful GPU with loads of VRAM and it needed almost 8 GB of memory to render the scene. As your GPU has 6 GB of VRAM, it runs out of memory and this is why it fails to render. Please check the article, linked in my post above to find tips on how to optimize your scene for GPU rendering.
