    Are there a way to use your own low poly mesh instead of VRays poly reduction when creating a proxy?

      Yep; we have this in 3ds Max, it will appear in Maya as well at some point.

        IN the meantime it is possible to do this, just need to reconnect the appropriate nodes and make sure the transforms are correct. It's just not automatic.

              It's not a feature per se, just Maya's node based flexibility! Just create the v-ray proxy as you normally would. When finished open the hypergraph and you should be able to reassign the nodes to a new proxy low poly object. Just have to make sure the transforms are correct for your new low poly object (it's probably a good idea to always create proxies at the centre of the world) and just assign the vraymeshmtl shader and it should be okay to render.
