You would normally do that by changing the f/number. When lowering the f/number, you could increase the shutter speed or decrease the ISO and the opposite when increasing the f/number.
But no, we don't have an option to preserve the exposure with the physical camera.
If you are using a standard camera, then tweaking the DOF settings in the camera overrides (render settings) will not affect the exposure.
