I can't reproduce the issue with a simple scene. Which Maya and V-Ray version is this? What operation do you try to undo? Does it happen on every scene?

I manage to reproduce it. Could you please unload V-Ray plugin in the Plug-in Manager, restart Maya and check if it still undo correctly during rendering.

In the plug-in manager you have two check box one to load/unload the plug-in and one to Auto load it. Leave the Auto load on and disable the Loaded one. This way when you restart Maya it will load V-Ray automatically. Please try that and let me know if the issue still persist.

I manage to reproduce the issue again on another machine but it happens rarely. Do you get any errors like this: // Error: line 1: The undo queue is turned off. //
Since we do not disable the undo queue I'll say that this is most probably Autodesk issue.

                  yes thats the error...
if the render is finished it does work again...

I just looked in our code and we only turn off undo briefly when the rendering layer is changed. I suspect this is not the case for you though.
Do you have any pre-render MEL callbacks or something like that?

no nothing... this does also happen in a clean scene with only cubes...

                            Hey,

This is probably a Maya 2018 (update3?) bug, but similar to the above.

Some material changes don't get registered (no 'setAttr' reaction in Script Editor), and therefore Undo does not work.
For a standard VRay material, change the Diffuse Color, Opacity Map or Refl Color slider. Then hit Undo. Any reaction?

(In Maya 2017 all is good)

That's not supposed to happen at all. It works just fine on my end, so I'm not sure how to reproduce the problem.
The VRayMtl parameters do leave command echo and they are undo-able.
Can you check your undo settings in Maya?
Does this happen while rendering or not?
