Could anyone tell me what I might not be able to do with the V-Ray Modo plugin within Modo, but I could do it in another V-Ray implementation? I'm only curious, due to wondering if using the V-Ray Modo plugin is missing the functionality of V-Ray in any way.

Even though all V-Ray integrations share the same V-Ray core, they are quite different, since we tailor them to each specific DCC app.
So if you want to really make a comparison, you should check our trials, we have them for all DCC app integrations.
Just comparing a list of features won't tell you the whole story, especially if you are not going to use these features anyway.
Still currently the major features missing in V-Ray for Modo are:
- texture baking (render to texture)
- vertex color texture
- extra tex render element
- resumable rendering
- V-Ray MDL material
- V-Ray GLSL material / texture
- V-Ray Metaballs
There might be others I am forgetting right now, but those are the major ones.
Note also that the price of V-Ray for Modo is lower than V-Ray for 3ds Max / Maya.
