Hi-

sorry if this answer is elsewhere already, I'm overseas and don't have all my resources available.

In material editing mode, is there a way to turn off a reflective layer without deleting it, ie a way to "hide" or "disable" that layer, and then turn it back on again later?

Unfortunately there isn't. This is something that is on our wish list, although I don't know when it will be worked in. Sorry for the inconvenience
