A texture option to save a custom list of key/values to use in materials would be super helpful. For example, having a dropdown list of pantone colors and their rgb values connected to a diffuse input would allow multiple color iterations with one material. Ideally this option is in the Rhino/vray side rather than just relying on grasshopper to do this work for easier portability and access to the full range of material inputs.

This is an interesting idea.
We had plans to introduce color pallets that can be saved and loaded in the Color picker UI but I guess you're after something different.
Having multiple values stored for every color slot is maybe possible but I'm not sure what the UI and UX associated with it would be.
