This is an issue I have come across with other plugins as well (FlexTools). Having both Enscape and V-Ray enabled at the same time crashes SketchUp upon opening. I have reported to Enscpae and Trimble but thought that you should know as well because it doesn't happen consistently across all machines and they have not been able to pinpoint the issue yet.

Can you mention exact versions of SketchUp/V-Ray/Enscape or any other plugin you've come across that also crashes with this configuration. Testing with both Enscape 3.1.0 and V-Ray 5.10.06 enabled on SketchUp 2021 I could not reproduce a crash, it might be helpful if you've noticed any specific steps for reproduction.Nikoleta Garkova | chaos.com

Thanks for providing the recording. As far as I understand, it crashes even with the V-Ray plugin disabled (using only Enscape+FlexTools) - correct me if I'm wrong.
That being said, are you able to find any crash dump files located in C:\Users\USERNAME\AppData\Local\Temp? Look for recent .dmp files and please send them over so we can inspect them.Nikoleta Garkova | chaos.com
