Hi @nikoleta.garkova,
a lot of people are checking out SU 2021 right now, to decide wether to go with it, or rather stick with a former version.
So I would hope, V-Ray 5 would bring more stability to SU 2019 and SU 2020 as well, as a lot of people might stick with that version of Sketchup.
I've been trying V-Ray 5 on all latest version, and it crashed all too many times.

it mostly crashed while in interactive render and paning around to fast.
This was both in Sketchup 2019 and Sketchup 2021, with V-Ray 5.
It happened with huge models (600MB) as well as smaller ones around 10MB.
MacOS Catalina Version 10.15.6

Is it possible for you to share one of those models?
I don't think it's the size or complexity causing the issue.
It is possible that there is something specific in the materials for example causing the crash.
I'd like to try and reproduce that here.
