The sky itself is a model of how a sky would react based on a series of parameters and the sun location/vector. So there are two ways that you can "change" the sky. The first would be to so simply change the location and/or the time of day. High noon is going to give you a fairly bluish sky, and deep into the evening is going to leave you with something much more auburn like. The second way is to change some of the parameters that control the sky. There are two that would be the most helpful; turbidity and ozone. With Turbidity, higher numbers will lead to a "hazier" result. Ozone will actually affect the color of the sun, with 0 being slightly yellowish and 1 being slightly bluish.
