It seems the Subdivision attribute is causing any texture to be rendered with a very small resolution in V-Ray GPU. The issue is already logged (internal bug-tracker id: VGPU-3901) for developer analysis. I'll raise its priority additionally. For now, you could use OpenSubdiv or static subdivisions as a workaround.
