When rendering a outdoor scene, what is the best way to get more interesting looking windows/glass? The model only conatins what the camera is seeing so there is not geometry to reflect.

Put a large plane facing the windows of your building with a nice bitmap or hdri stuck in to a vray light material - turn off the plane to casting gi and shadows.
