With a standard max material I’d make a diffuse material [put that obviously in the diffuse slot] and a bump and spec material - and put them in the correct places.
With the vray material im not 100% sure where to put it.
I realise I need to put the glossy refraction down, and make the reflection colour lighter [and take away trace reflections].

basically u are right.
My opinion, is that Vraymaterial is fisically more correct than standard raytracing materials. Specular highlights in real life are created ONLY from other (more lighted) objects present in the same scene/ambient. Correct using of reflections, glossiness and/or falloff maps, is the only way to obtain what u want.
