To achieve a rendering “without” shadows, you need to use a little trick. You CAN dial down the sun strength and simply dial up the exposure brightness in the Visual Settings / General tab.
But an even nicer result is achieved if you create your own little 360° Skybox in all white. Use it as skybox and change the time to Night. This will emit an equal glow from all sides.
I’ve created one such skybox for you, find it attached. Using it, you can then even control the light brightness using the Skybox Brightness slider.
