In wich gamma are saved the file in vray blender?

If you have set your color mapping settings to gamma 2.2 (which should be the default), then that's the gamma that is saved to the images redered with VRay (depending on the option whether the gamma is applied or only considered for adaption). Mind that the color corrections from the VFB are also saved, including the sRGB for 8-bit images (jpg, png, etc). So gamma 2.2 from the color mapping + sRGB from the VFB will save both to the image.

So if i disable color mapping and i set adaptation only i obtain a file output in gamma 1.0 ?i have seen in 3dsmax it's possible to set gamma output by a script, normally i check adaptation only an i save in exr.

If you save to exr with "adaptation only", then yes, you will get gamma 1.0 out of VRay.
