How can i make waves big and far away from each other ? I´m thinking a beach with waves peeling in 5sek periods..

You can try playing with the Control by Wind Speed option. Increasing the value will produce bigger waves. The Velocity option controls the speed.

I think he means big waves but adjusting the spacing between them.

Exactly. Like this: Click image for larger version

The thing with clean waves like this is that they form AFTER the wind has set. the swell continues to push in the wind direction til the waves meets land. all the small microwaves gets eaten by bigger ones and therefore the waves come in sets like this

i think there is a chance to do this, but will be not easy. you can't use the wave force, apparently these waves are present only near to the shore, they have different nature, and are actually not entirely wind based.
what causes them, and why they are present only near the shore? well, if you create a paper funnel and put it on you ears, you will observe significant increase of the surrounding noise, and that is what actually happens near the shore, the bottom is the lower wall of the funnel, and the surface is the upper wall. these big waves are the micro noises from the entire ocean, caught and magnified by the funnel. that's why they are not observed in lakes, even in big ones.
and now back to the simulation, the first part you need here is good bottom, it must be to a relatively low angle to the surface. the second part is the generator, perhaps a moving geometry, or the wave force texture set to high wind speed but attenuated by a small multiplier. the resolution must be relatively big, to avoid the dissipation, but to make the experiments faster you can use a narrow grid and when the settings are found make it wide

as a surfer in the tropics id simply put it as waves out deeper are just circular moving water where only the top shows at the surface as the waves comes into shallow water (or slams against a reef) the circle "trips" and is pushed up and falls forward since the top is moving faster than the bottom dragging on the ocean bed. A quick slam into shallow water causes a barrel to form
