Generally I do a dirt pass with reflection and GI off, but flipped normals can be a pain. Is there a workaround?

Hmm, I could have sworn that we have a double-sided option in VRayDirt, but it looks like it is in V-Ray for Maya only. Will make a note to include it in the 3ds Max version too.
