Anyway I ended up resetting the render settings to default then tweaking a few settings, nothing crazy.
Redid most of the lighting by swatting out the IES for Vray lights, deleting the Vray sun (by the way the daylight system was still using a skylight), replaces it with two plane lights in the window.
Did a simple white material over ride for everything except the ceiling lights
This took 58 minutes on a single machine

Wouldn't you say an hour with no materials is rather high?

Tbh glorybound i didnt reset anything. I could be completely wrong but try changing back to your old camera settings and adjust the lights back and render. I had a feeling that it was the camera settings. Its happened to me before where i got strange render times with certain camera settings.

I had some issues this week, vray3.6, where I was using very low EV settings (1 or 2...) to have enough light in the image. Was using a HDRI domelight (pg skies), adding portals seemed to do f-all. Vray settings were standard BF/LC. Admittedly it was a deep building with relatively small windows so it was tough to balance the areas near the windows vs the deeper areas. That really caused a lot of noise issues. Ended up faking some soft general lighting with vray sfere's. Still wasn't great though. It was that bad in the dark parts with dark materials that the denoiser didn't even seem to do anything. Ended up rendering the problem shots with extra light and in post brought back dark areas from the original lighting from the tests shots.

No, not yet. I put an ad on craigslist, but everyone flaked out on me. I spent some time and I thought I got it, but nope. I switched around some cables, turned off my Pixelbook's WIFI and plugged in the data cable and it worked, but when I brought my Pixelbook to my office and plugged it in, it didn't work. I'll spend some more time this weekend.

              Sounds like a DHCP problem.

The house was roughed with CAT5 and RJ11's, so I had an electrician come out and test which CAT5 was for my office and swap out the cover for an RG45 and patch it into my router (garage). I don't know if he put the RJ45's on wrong or if something is wrong in the walls, but I am not getting a signal when I plug into it (office). I can plug straight into the ISP router (garage), so that is working, but when I plug my laptop into the wall in my office, I don't get a signal. I am about ready to put the Render Pro in the garage since I don't really need physical access to it.

Yes, I put it down to brute force and an older 6 core i7.
I could get it faster using lower image sampling and denoising.

OK i tweaked by image sampling and LC settings (my retrace was too high) and got the render time down to 35 minutes .
I also used de-noising using the Mild preset.

I'll have to post the materials. 1/2 an hour grayscale still seems very long.

No it's not. Maybe on your machine it's faster but on a moderate machine, this is pretty standard for high resolutions. Besides is the override material just a diffuse or also reflection? (that's how I render my override mtl)

The override is just a gray material without any reflection.

                              reflection 30

I have started to go through the materials, replacing them with my own in some cases. There are a lot of overly complex shaders in your scene which I suspect where the render killer lies.
This is still 35 minutes on a single machine

For this particular scene, the slowdown is because there is a lot of light coming from the sky outside through a relatively small opening. Here are two renders, one is with the original settings, the other one is with "Max ray intensity" disabled. You can see what V-Ray has to fight with... If these are the actual light levels that you want, then using a dome light with the sky texture in it will get you faster results.
