We are planning to release updated Courseware and tutorials for V-Ray 5 for Rhino - I'll make sure to keep you posted and let you know when this happens.
The materials from the "Quick Start Videos", as you are already aware, are not available for download, these are only showcasing the features.

That being said, you can still open and use the project files from our Courseware portal - https://docs.chaosgroup.com/display/V3FR. They should open and render just fine with V-Ray 5 - if you find any discrepancies or issues, do let us know.

Moreover, it would be great if we can hear your feedback on what you'd like to see in the future when it comes to tutorials and/or courseware materials.
