My machine currently has a Nvidia Quadro K600...quite an old and cheap GPU, yet V-Ray does recognize it for GPU and hybrid rendering. I can switch it out for a AMD Firepro W5100 which is more powerful. I would like to check and make sure V-Ray will in fact recognize and be compatible with this AMD GPU.

No, you cannot use AMD GPU because, Vray GPU uses Nvidia cuda.

I don't know too much about this, as I use Nvidia cards....but remember seeing users asking for AMD GPU support from time to time on here. Not sure if it only applies Mac users, or universally to AMD/openCL(but I think it's all openCL on Vray 3)....
