When I switch from CPU to GPU on Mac M3, my environment mapping changes. On CPU I have it rotated to -90. On GPU, I have to rotate it to 180 and flip horizontal to get the same mapping.

Could you please share your file so we could test on our side? If that is alright, archive it using the Pack Project tool (Extensions>V-Ray>Pack Project tool) and open a ticket (request type: Product usage questions or issues) where you can submit your files. Please share a link to this forum thread in the ticket as well.
Also, let us know which exact V-Ray version you have currently installed (Extensions > V-Ray > Help > About window).

I would like to share the update on this case:
The flipping was caused by the Mix (Value) texture - the workaround is to slot the mentioned texture with the .exr in the V-Ray Dome light instead of Environment.
Also, in the V-Ray 7 version the Simple Mix, Mix (Value), Mix (Operator) and Mix (Map) textures are no longer available. They are replaced by the Layered texture, which at the moment does not have GPU support for the Sky texture. To address that I have logged internal Improvement task (SK-5427).
