If I wanted to output a render element (i.e a render pass) that is not included in the default list (say output some random channel of a shader) how would I do that?

Unfortunately, right now it is not possible. Out of curiosity, which attributes do you need? We are working an adding the possibility to output any texture node in the shader tree to its own element, not sure if this is what you need though.
