I usually use anything between 1 and 4 for complete blacks, depending on the environment (lighting, placement of the object and the surrounding objects). I'm using LWF.
I would like to know the theory why it's better not to use for white anything over 200? I know that 255 with LC isn't recommended in vray manual but why even that low for white?

I think it is because Gamma corrections changes the curve of midtones.
For white I'm usually in about the same value zone, even though sometimes I need higher values (up to 250). I'm always kind of balancing them between the amount of burn and 'whiteness' in the render.
i guess it depends on your workflow, do people who use max gamma correction tick the 'affect color selectors' box?
I have the 'affect color selector' box enabled, yes. Otherwise choosing the proper colors and having them match (to a degree) with the render is pretty much impossible. Within my workflow anyway.
